Of course, I ran out the next day to buy all of the ingredients. The Knorr website says the mix contains "a garden medley blend of carrots, onions, tomatoes, celery root, leeks, cabbage, cauliflower, green peas, and potatoes". Sounds kind of weird for a dip, but you can't "see" all those ingredients - and it really does taste delicious!
Hard-To-Resist Vegetable Dip
1 (10 oz.) pkg. chopped spinach, thawed, cooled, & drained
1 1/2 c. sour cream
1 c. mayo
1 pkg. Knorr's Vegetable Recipe Mix
1 (8 oz.) can water chestnuts, chopped
3 green onions, chopped (optional)
Directions: In a medium bowl, combine all ingredients. Cover and refrigerate for at least 2 hours. Stir before serving.
You can fill a bread bowl, or serve it with fresh veggies, pita chips, tortilla chips - whatever you like to use as a dipper!!
TIPS:
- I hate messing with frozen spinach in the box. Kroger makes a frozen spinach that is in small, round, flat "sections". It's in a plastic bag, so you can take out however many you need, and save the rest for later. Plus it's easy to cut it up into tiny pieces, too. Love it!
- I made mine with Kraft Real Mayo - I don't know how Miracle Whip works.
- I left out the green onion.
If you like spinach dip, you'll love it! I love this stuff so much that I ate it for lunch twice this week!
