Lulu found the recipe on Pinterest, made it a couple of times, and we all thought it was delicious. Looking at that recipe, I think it was originally from the Frank's RedHot site. When I started making the dip, I made a few tweaks to it, so I'm going to share my version with you!
Buffalo Chicken Dip Appetizer (with less fat!)
Ingredients:
8 oz. reduced-fat cream cheese
1/4 c. Frank's RedHot Buffalo Wings Sauce
1/2 c. reduced-fat Ranch dressing
1/2 c. shredded Cheddar cheese (or bleu cheese or whatever cheese you like)
Directions:
In skillet, over low-med heat, melt cream cheese. Carefully add chicken, wing sauce, Ranch dressing, and stir to combine. Add cheese, and stir gently until melted. Place in serving dish and serve with tortilla chips.
This makes approximately 3 cups of dip. If you're having a lot of guests, you could easily double all the ingredients.
We usually eat this warm, but it's also good cold if you're sometimes too lazy to reheat it. Yes, sometimes I am too lazy. And yes, sometimes I make a meal out of it. Whatever. Don't judge.
Note: I have had this (and you can make it) with regular cream cheese and Ranch dressing. The low fat version tastes exactly the same. No one has been able to tell the difference. So save yourself some fat and calories!!
On a side note: See those adorable little dipping cups?? I love them!! They're stoneware, and measure 2.5" in diameter, and are 1.5" high. (similar here and here)
