Spicy Honey Chicken


We eat a lot of chicken, so I'm always looking for new recipes to try. I found this recipe for Spicy Honey Chicken on the Our Best Bites site. It sounded a little too spicy for us, so I changed it just a little to better suit our taste. I also used chicken breasts instead of chicken thighs, but you could use whatever chicken parts you like best.


Spicy Honey Chicken

Ingredients:
1.5 lbs. boneless, skinless chicken breasts
2 tsp. vegetable oil

Rub:
2 tsp. garlic powder
2 tsp. chili powder
1/2 tsp. onion powder
1/2 tsp. coriander
1 tsp. salt
1/2 tsp. cumin

Glaze:
1/4 c. honey
1/2 TSBP. cider vinegar

Directions:
Combine rub ingredients in a bowl and mix well.


Lightly brush chicken with oil.
Toss chicken with spices to coat well (I put mine in a ziploc bag & shook it.)


Mix honey & vinegar together (heating the honey makes it easier to mix) 


Grill chicken until cooked through, turning once.
Brush glaze on chicken in the last couple of minutes of grilling. Watch carefully, because the glaze burns easily. 


Notes: I felt like the chicken needed a little something more. I think next time, I may add some BBQ, sweet & sour, or teriyaki sauce to the glaze or marinade the chicken before adding the rub.
