The secret is in the sauce. Or in this case, the marinade. I've had this marinade recipe for awhile - so long that I've forgotten where it originally came from - and I've adapted it over time to suit our taste.
And you know how they say to only marinate fish for 30-60 minutes or it makes it soggy? Not true in this case. We marinate our salmon for 18-24 hours and it still flakes perfectly! And it's full of delicious flavor!!
{enjoy the view} All-Purpose Marinade
3/4 c. cooking oil (I use a blend)
1/2 c. Kikkoman's soy sauce
1/4 c. Worchestershire sauce
1/4 c. Pompeian red wine vinegar
2 TBSP. lemon juice
2 TBSP. lemon juice
1 TBSP. dried mustard
1 tsp. ground black pepper
3 tsp. fresh minced garlic
Whisk ingredients together - and that's it!
Around here, it's usually just the two of us, so this would be way too much marinade for one meal. I usually divide it into 3 servings, and put two of them into gallon-size freezer bags. I lay the bags flat on a shelf until they're frozen, then I can stack them pretty much anywhere in the freezer because they take up so little space. It takes about 2 minutes to thaw them in hot water, and then you can just pop whatever you're marinating right into the bag. When it's finished marinating, you can seal the bag and dump it in the trash. Easy clean-up!
Now onto the salmon!
We pop the salmon into the freezer bag (once the marinade is thawed, if frozen), skin side up, then reseal the bag. The bag then is placed in the fridge, still skin side up, for 18-24 hours.
We like to use non-stick grill foil to keep clean-up quick and easy, so we make a little "tray" out of foil for the salmon. When the grill is hot (medium-high heat - we have an infra-red grill), the foil "tray": is placed on the grill, and the salmon is placed on the foil, flesh side down. Once the lid is closed, Gus cooks it for about 15 minutes (adjust more or less for your piece of salmon and your personal taste). Gus truly is King of the Grill - this is the best salmon ever!!
