{enjoy the view} Creamy Mac-n-Cheese


Mac-n-Cheese has always been one of my favorite foods - the more cheese, the better! Gus's dad gave us some Hickory Farms cheese, and I decided to use it in mac-n-cheese. Here's what I came up with:


{enjoy the view} Creamy Mac-n-Cheese

Ingredients:
4 TBSP. butter
1/4 c. flour
1 tsp. salt
1/2 tsp. pepper
1 c. heavy whipping cream
1 c. milk
2 oz. Cheddar Jack Onion cheese, cubed
2 oz. Farmhouse Cheddar cheese, cubed
8 oz. Velveeta, cubed
1 box Barilla mini rotini

Directions:
Make pasta according to package - while it's cooking start the cheese sauce.

Melt butter in saucepan, then removed from heat and whisk in flour, salt, & pepper.
Return to med-low heat, and whisk until bubbly.


Gradually add whipping cream and milk, whisking continuously.


Continue to heat on low, whisking frequently, until mixture thickens and starts to bubble.


Gradually add Cheddar Jack Onion cheese, whisking until melted.
Gradually add Farmhouse Cheddar cheese, whisking until melted.
Gradually add Velveeta, whisking until melted.


Add cheese sauce to drained pasta and stir until evenly combined.


Mmmmmm, lots of creamy, cheesy goodness!!
