Three-meat Chili


The other day, I made the most awesome chili ever, according to Buddy. It had 3 lbs. of meat in it, so that pretty much explains why he liked it, LOL!


{enjoy the view} Three-Meat Chili

Ingredients:

1 lb. beef strips (the kind for stir-fry)
1 lb. ground beef
1 lb. pork loin (precooked)
1/2 med onion, finely chopped
1 green bell pepper, finely chopped
18 oz. tomato puree
2 14.5oz. cans beef broth
2 cans Bush's chili beans, one mild, one hot
1/2 tsp. chili powder
1/2 tsp. Mexican chili powder
(you can use more or less chili powder to taste)

Directions:
  1. In skillet, brown ground beef and beef strips (separately) in a little olive oil, then set aside.
  2. In stockpot, brown onion & green pepper in a little olive oil.
  3. Add ground beef, beef strips, and precooked pork to onion & pepper.
  4. Add one can beef broth to mixture, then add chili powder.
 

     5.  Add tomato puree, remaining can of beef broth, and beans.
     6.  Simmer for 3-4 hours, stirring occasionally.


Tips:
  1. For the pork, I used a leftover pork loin that I cut into 1/4" slices, then into bite-size pieces.
  2. I seasoned the beef with a little garlic and salt.
  3. I simmered the chili covered for the first 3 hours, then uncovered for the last hour.

Hearty, filling - nothing better on a "chili" day!!
